Italian Sodas at home

I had never had an Italian soda before today, but my 15 year son loves them. and goes to the local coffee shop a few times a week to buy this delicious summertime treat. My wallet needed a break :) As I was putting together a compiled list of the best summertime drinks, I stumbled across the recipe from Sugar and Charm for their version of flavored Italian sodas. They looked so good I new I just had to try to make them at home.

So that is exactly what we did !

Today we made strawberry flavored Italian Soda. We plan on trying other flavors like blueberry and vanilla very soon. But for now, here is how we made our version of the strawberry Italian Soda!

Simple syrup is the base for your flavor. You can add many herbs, fruits and even vegetables to flavor this sweet syrup. The base for your unflavored simple syrup is 1 part water to 1 part sugar. Then you can add what ever you like for flavors.

We did :
1  C water
1  C sugar

bring to a gentle boil. Boil until all your sugar is melted (the water will become clear)
Add in your flavoring:
2 cups strawberries - cut in half (1 C would probably do but I like a stronger fruit flavor if I can get it)

Boil the strawberries in the syrup for about 10 minutes. and simmer for 10 minutes more.
Strain your syrup and discard the strawberries. You have taken all their flavor now.
Let cool and store in an air tight container for up to 10 days in the fridge.

You now have a delicious strawberry flavored sweetener to add to your Italian sodas, mixed drinks, ice cream... Use your imagination :)

To make the Italian Soda:

You will need:
Glass filled with ice
Strawberry syrup
Club soda
Cream or half & half (Almond milk also works great if you have dietary needs)

Fill your glass with ice.
Add 1/4 part flavored syrup, add your club soda and top with a little cream. Give it a stir and see how you like it. Adjust the ratios to your taste. Yummmmm! Perfect summertime drink! Rich and delicious and so refreshing too!

Here are a few other simple syrup recipes that you may enjoy in your Italian soda  and/or mixed drinks ...

The recipes below are using the simple syrup recipe and ratios above (1 C sugar and 1 C water)

Classic Vanilla - Always YUM
split one vanilla bean in half and put it in a heat proof bottle. Pour your hot simple syrup over the vanilla bean and let it "marinate" for 8 - 10 hours. Remove the bean pod before using.

Blueberry - Our next flavor to try!
1 1/2 C. Blueberries

Lemon & Mint - perfect for Ice tea!
Generous handful of fresh mint leaves
Juice and zest of 2 lemons

Rhubarb Syrup -More Italian sodas!!
1 stalk of fresh rhubarb chopped

Blackberry Syrup -
1 1/2 C fresh blackberries

Basil & Lime - Maybe not for Italian sodas but would be great in a margarita or a martini
Generous handful of fresh basil
Juice & zest of 3 limes

Strawberry & Balsamic - Different but sounds good!
Roast 1 pint of quartered strawberries tossed with 1 tablespoon of white balsamic vinegar in a 350-degree oven until very soft, about 15 minutes. Infuse the fruit mixture in your warm syrup for about 20 minutes. Strain and chill until ready to use.

There really is no limit to what you can infuse into your simple syrup. If it sounds good to you .. Try it! Let us know what you think and if you try any new flavor combos.. We're always looking for some good summertime drink ideas!

Meatball Subs on a Stick

I love a good messy meatball sub as much as the next guy!  But lets face it, sometimes they are just to messy! Hard to handle when your walking around a party for sure. Well, here is the solution!
Meatball subs on a stick - Yay on a stick!
Now you can serve these tasty little treats at any gathering and you wont have to worry about all of the mess that comes along with them.
People will definitely be talking about how cleaver and resourceful you are when these babies show up on a platter! They look great too!
Here's how to make them.....

Ingredients:
Frozen meatballs, thawed  (or your favorite recipe, cooked ahead)
Pizza dough in a can (in the refrigerated biscuit sections of your grocery)
Mozzarella cheese, shredded
Marinara Sauce
Wooden skewers - soaked for at least 30 minutes in water so they don't burn

Preheat oven to 350 degrees - lightly grease cookie sheet or tray with cooking spray

Roll out the pizza dough just a bit to thin it out. Using a pizza cutter, cut the dough into strips. about an inch and a half wide.
Start skewering your sticks .. start with the dough, then a meatball, pull the dough around the meatball as shown in the picture above. until you are able to finish with the dough last.

Bake in 350 degree oven for 8 - 10 minutes until dough is golden brown and meatballs are cooked through.
Sprinkle on the mozz. cheese after you pull it out of the oven. It will melt fast.

Serve with warm marinara sauce and enjoy!

Super Easy Star Ornaments

You can have one of these adorable star ornaments made in about 10 minutes! They are so easy and just the cutest little stars, they will be a perfect addition to your Christmas tree this year!

I also think they look a bit like star fish. Since I am doing my kitchen in a beach theme, these will be perfect for the empty wall I have yet to put anything on.

Here is how you can make your own! ...

 Supplies you will need:
Wooden clothes pins (We got ours at the dollar tree for a buck!! )
Hot glue gun
glue sticks
Craft pain and a pain brush
twine or jute for a hook
Embellishment for the center (optional)

Separate each clothes pin from its metal spring. We used 5 clothes pins per star.

Glue the 2 pieces back to back with a little hot glue

Arrange your pins in a star shape and glue together at the center

Paint your perfect star any color you like. Add some glitter if you really want to make it sparkle!
Attach your twine loop to the back of one point.

Glue on your center embellishment to add some pizzaz!!
How easy was that?? and you can color them to match any color scheme.
So grab your paints and your glitters and lets see what you come up with!
E-mail me your photos to be added to the page.

How to Color Carnations

Carnations are available all year long, and a very simple yet beautiful way to jazz up any table setting.
If you can't find carnations in the color you desire, why not color them yourself?
It's actually easier than you think. A little food coloring and you can have any color you want!
Just follow these simple instructions....

Materials needed:
White carnations
Food coloring - your choice of colors
Vase filled half full with water
Scissors

Add the food coloring to the water. Be sure to add lots to make it a deep rich color.
Snip the ends of your carnations under running water. Place the freshly cut flowers immediately into the vase of colored water.
Leave them over night to soak up all that color. And it's as simple as that.
Try adding different colors to separate vases to make a full rainbow of beautiful flowers.
This technique will work with other white flowers as well.
Can't wait to see your fabulous creations! Let us know how it worked for you!
