Dinner Dilema!

Some days this is just exactly how I feel!
This picture is the way I am feeling today. It is Tuesday but to me it is my "friday" the end of my work week. By the time my "friday" rolls around I don't want to be a responsible parent/wife/employee LOL I just want the night over with!
I think I will let the tweens just have cereal and cake for dinner :) I might earn a few brownie points for that one! ... ohhhh brownies maybe, instead of cake haha!
OK OK that will never happen and they know that (sorry guys I know you were looking forward to cake!) So Im having a dilemma now with what's for dinner. I didn't take anything out of the freezer and it's 2 days before grocery shopping... so what do you do on nights like this ?

Do you have a go to freezer meal? Left over night? Fend for yourself night?

Enlighten me!

And it will take away hours of your life on a daily basis. Once you start the browsing process, I believe they hypnotize you and take over your mind. It's impossible to just take a quick look.

DIY Mongolian beef stir fry

DIY Mongolian beef stir fry

 My daughter in law is always sharing her "food porn" with the world on facebook! It is mouth watering, and irresistable!! Last week she was so kind to share her Mongolian Beef stir fry recipe with us and I just had to get it made ASAP!  Her photo was MUCH better than mine, but the end result was fabulous! The family gobbled it up (except the veggies - kids are VERY picky!! )

Next time I might add some carrots and green beans. Atleast I know they will eat those. Broccoli and mushrooms are a definate "I'm not eating that!"


2 tsp vegetable oil 

1/2 tsp minced ginger 
1 tbsp of minced garlic 
1/2 cup soy sauce 
1/2 cup water 
3/4 cup dark brown sugar (I used 1/2 cup light brown... thought this was a bit much for the amount of sauce. If you like it REAL sweet don't change the ingredients)
1/2 Cup vegetable oil- for frying 
1 pound tri -tip beef - or london broil works nicely
1/2 cup cornstarch 
bundle of green onions, cut up into 1-2 inch in length 
dash of sesame oil
variety of chopped veggies to your liking

Cut the steak into medium size peaces toss in corn starch and fry it until golden brown. Drain it from the oil set it aside.

Sauce: combine soy, ginger, garlic, brown sugar and water in the medium pan let it cook for 10 min or until it starts thickening.

For preferences if you want to add more veggies such as mushrooms, broccoli, zucchini, bell peppers or so on I would cook them on the side on high heat then add them at the end so they get covered in sauce and not boil and turn soft.

Serve it over rice since it's very rich and think sauce dish..

Add a little KICK to the dish with some siracha!! Elevates the flavor even more!! :)
